(Adapted from THE BELFAST COOKERY BOOK)
Ingredients:
- 3 oz (3/8cup) salted butter
- 4 oz (1 heaping cup) flour
- 3 oz (castor or white) sugar
- ½ teaspoon baking powder
- 2 eggs
- 1 lb stewed apples (4 apples)
Instructions:
- Cream the butter and sugar. Lightly whisk eggs. Gradually beat in the eggs.
- Stir in the flour and baking powder.
- Spread the stewed apples in the bottom of a pie dish and cover with the cake mixture made in steps 1 & 2.
- Bake in oven 350F for approximately 1 hour.
