Eve’s Pudding

Ingredients:

  • 3 oz (3/8cup) salted butter
  • 4 oz (1 heaping cup) flour
  • 3 oz (castor or white) sugar  
  • ½ teaspoon baking powder
  • 2 eggs
  • 1 lb stewed apples (4 apples)

Instructions:

  1. Cream the butter and sugar. Lightly whisk eggs. Gradually beat in the eggs.
  2. Stir in the flour and baking powder.
  3. Spread the stewed apples in the bottom of a pie dish and cover with the cake mixture made in steps 1 & 2.
  4. Bake in oven 350F for approximately 1 hour.
