Sean Byrne’s Favourite Tea Biscuits

It was a favourite recipe of Sean Byrne, 2006 Award Recipient


  • 2 cups all-purpose flour
  • 4 tsp baking powder
  • 1 tsp salt
  • ¼ cup shortening
  • 1 cup milk


(Yield 12-18 biscuits)

  1. Mix together flour, baking powder and salt
  2. Cut shortening into the dry mixture (use 2 knives or a pastry cutter) and mix until consistency of coarse cornmeal
  3. Make a well in the dough and add milk slowly
  4. Stir vigorously until the dough comes off the sides of the bowl
  5. Turn dough onto a lightly floured board and knead for 2-3 minutes
  6. Roll into a ½ thickness then cut into 2” biscuits
  7. Place on an ungreased baking sheet.
  8. Bake 450F for 12-15 minutes until golden
